Founded in December 2020 by two Edinburgh friends with over 30 years in hospitality between them. The micro roastery at 48 Thistle Street roasts 100% Arabica beans in small batches to order, with roasting happening right in the shop. Ethically sourced and focused on freshness, Cobbled Roastery also serves wholesale and retail customers from its cafe on one of Edinburgh's most recognisable streets.
