Baima
Baima Farm is located in Menglian, Yunnan, and is run by Laicheng Dong, who has worked in coffee since the late 1980s. After purchasing his own land in 2012, he has focused on steady quality improvements, supported by Yunnan Coffee Traders through pruning, farm management, and ongoing development work. Cherries are selectively harvested and undergo anaerobic fermentation before drying across mechanical systems and raised beds. Moisture is reduced in stages, with a resting period between drying phases to stabilise the coffee. The process is designed to preserve structure while allowing the fruit character to develop with clarity.
