We then gently roast this to a medium dark profile to provide dark chocolate, a medium body and a red apple sweetness which suits multiple brewing methods. Origin & Processing The Ringtons Decaf is sourced from Central America and is decaffeinated using the Mountain Water process in Mexico. Mountain Water is referred to as “indirect decaffeination” . The water used comes from Pico de Orizaba, the highest mountain in Mexico and works by saturating the beans to remove the caffeine, whilst keeping the coffee flavour compounds in place. Then the beans are triple dried gently to restore them back to their usual moisture content, before being polished.
