Produced in Marcala, La Paz , this coffee comes from COMSA (Café Orgánico Marcala S.A.) , one of Honduras' most respected speciality coffee cooperatives. Founded in 2001 by just 61 farmers , COMSA was created to give producers a more sustainable future through organic farming, better prices and access to speciality coffee markets. Today, the cooperative has grown to more than 1,600 members , becoming internationally recognised for producing exceptional coffee while investing heavily in its local communities. At the heart of COMSA's success is its regenerative farming philosophy, known as the "5 Ms" - Organic Matter, Microorganisms, Minerals, Fermented Molecules and Grey Matter (knowledge) .
