An organically grown coffee from COMSA Marcala Honduras. Natural process. COMSA COMSA, or Café Orgánico Marcala S.A., was founded in 2001 by 61 farmers in Marcala, La Paz, Honduras. Faced with low coffee prices and a reliance on synthetic agricultural inputs, the group set out to create a more sustainable and independent way of farming. They committed to organic production and began seeking access to speciality coffee markets. The transition was not easy, but through technical support, shared learning and close collaboration, COMSA developed a regenerative farming model known as the “5 Ms”: organic matter, microorganisms, minerals, fermented molecules and knowledge, or “grey matter”. This philosophy now underpins both its agricultural practices and its education programmes, helping members build greater resilience, confidence and independence. Since those early beginnings, COMSA has grown to include more than 1,600 members and is now regarded as one of the most influential coffee cooperatives in Honduras. Most farmers deliver their coffee directly to COMSA’s facilities in Marcala, while decentralised collection points and technical visits support producers in more remote areas.
