Fruit Salad

Is this the most spectacular coffee you'll taste in your life. Quite possibly, this particular lot is truly something special. A coffee that tastes like fruit juice and will please pretty much any coffee drinker. A relatively new and unique varietal called Ombligon, named after the little dimple in the bottom of the coffee cherry that looks like a belly button (Ombligo in Spanish). The cherry is resistant to broca (berry borer) and leaf rust and produces a superbly sweet yet floral and complex coffee akin to the great Ethiopian Gesha's. Adrian and Nestor Lasso started experimenting with varietals like Ombligon on their family farm after joining forces with neighboring farmer Jhoan Vergara. Doubling down on new non traditional varietals and treating the coffee processing portion of the harvest with as much importance as the growing. This particular lot of coffee has been popped through several phases of processing including 48hrs of fermentation in aerobic recirculating tanks that pump the must (coffee juice) back over the top of the fermenting cherries as it breaks out, monitoring for brix and ph level constantly. It is then floated, with faults removed, before being washed in 50*c water to kickstart a new fermentation with cultured yeasts and sealed in anoxic tanks at 32*c for approx 38 hours. It is mechanically dried afterwards to bring the moisture level down around 18%, then transferred to sealed bags to homogenize over 2 days before being finished traditionally down to the target 10-12% in shaded marquesinas. The result of all this care and attention from 'seed to bean' is an explosively sweet and complex cup unlike most coffees out there, and one with less faults and loss in the long run.
