Our very first coffee from Costa Rica is a vibrant and sweet number from producer Hector Estéban Sanchez - his farm, Bajo Canet , is located in the Tarrazú region at approximately 1700masl and he's well known for his 'musician series' of coffees of which this coffee is of course a member ! A mixture of SL28, Geisha and Typica make up this lot and it has undergone what the producer describes as a ' Raisin Honey ' process, which consists of the following: - Cherries are hand-picked and placed on African beds - After 3 days of drying, only the skin of the fruit is removed- the pulp remains to contribute to fermentation - Frequent turning of the cherries ensures both even drying and prevents over-fermentation This results in a final cup which excels both on espresso, white or black , and as a bold filter featuring notes of blueberry, orange zest and lemongrass .
