Producer Calaro Varietal Yellow Catucaí Process Natural & Volcanic Fermentation Origin Southwest Minas Gerais, Brazil Altitude 900–1,100 MASL Farm Mio Farms This coffee has been specifically selected for Stroud and the people of Stroud who support all the amazing local independent businesses of Stroud. The colours are drawn from the Stroud coat of arms. The green is for the water that drew all the weavers to the area and the red represents the Stroud scarlet that Stroud became famous for and the red cloths which were left to dry on the hills. This lot comes from another set of the rolling hills but these ones are over in Southwest Minas Gerais in Brazil’s, an area known for producing sweet & approachable coffees with plenty of character. Grown between 900-1100 metres above sea level, this Yellow Catucaí lot has been carefully processed to bring out a rich, tropical sweetness with a creamy, syrupy body. The coffee combines two processing methods. Part of the lot is naturally processed, where the coffee cherries are dried whole using very little water, one of the most environmentally conscious processing methods in coffee, which we are a real fan of here at NONI’s. This also helps create a sweeter cup with deeper fruit notes. Alongside this, part of the coffee undergoes a 72-hour volcanic fermentation (this is when they dry the cherries in a pile making a volcano shape- see image!) using a starter yeast to carefully guide the fermentation. The farms involved use a mixture of hand-picking and machine harvesting, with coffees slowly dried on patios, raised beds and rotating dryers before resting in wood silos to stabilise and develop flavour. In the cup, expect tropical fruit sweetness, chocolate notes and a syrupy body that works beautifully both black and with milk. A comforting and approachable coffee with a little extra depth and character behind it.
