Unavailable About Profile This is the second lot we shipped this harvest from Teodoro (Teo) Engelhardt’s farm Finca La Bella. Finca La Bella must have the longest rainy season of any coffee farm we buy from – it seems to lightly rain almost year-round. This abundance of water makes the terrain incredibly lush and there is plenty of water for the trees and canopy, but it does come with some challenges. The cooler temperatures that the rain and fog bring, make the crop mature slowly and it is often only ready some two months after most other farms in Guatemala. Teo also needs to be very careful in managing the space between the trees to make sure air can circulate to help prevent fungal growth. Villa Sarchí and Caturra are two varietals that can handle the unique cloud-forest climate at the farm and both have been growing well here for many decades. Process Traditional Washed Process Varietal Caturra Region San Agustín de Acasaguastlán, Sierra de Las Minas Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
