Unavailable About Profile The Sierra divides the two states of El Quiche and Huehuetenango and at its highest reaches 3800m. On a clear day, a view to seven volcanoes can be seen from the summit. This is not a traditional coffee growing region; it has a cooler climate more suited to corn and potato which are the crops that the community of Cooperativa El Sendero farmers are more used to growing. It has only really been in the last ten years that the climate has warmed enough to grow coffee at the high altitude of their farms (1800m to 2000m). Many of the farmers used to pick coffee grown at the larger estates at lower altitude in Huehuetenango and have used that experience to help them establish their own plots of coffee. Process Traditional Washed Process Varietal Caturra Region Concepción Huista, Huehuetenango Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
