Unavailable About Profile We have been buying coffee from Finca Balvanera for over a decade now. First from José Yepes, and after his death in 2020, from his daughter Magaly del Carmen Yepes Trejos. Over the last six years, Magaly has made Balvanera her own, taking time in 2022 to travel to Huila to visit three farmers we work with there and learn how to develop her land and coffee growing and processing skills. The land she inherited from her father did not have processing facilities, a coffee nursery, or a farmhouse. Over the last few years, Magaly has completed her own coffee nursery and started building a house and processing station. She hopes to complete this project in 2026. Building a new washing station is a terrific opportunity for Magaly, she has been able to apply knowledge from a variety of sources, including her own experience, in the build design. We look forward to seeing her new facilities later in the year. Process Traditional Washed Process Varietal Caturra and Castillo Region Chachagüi, Nariño Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
