Unavailable About Profile Luiz Paulo Dias Pereira Filho is a founding partner in Carmo Coffees – the exporter in Brazil with whom we work. Luiz Paulo and his cousin, Jacques Pereira Carneiro, decided to start Carmo Coffees to help the family farms find international buyers and establish Carmo de Minas as one of the best coffee-growing areas of Brazil. In recognition of Luiz Paulo’s efforts over the years his grandfather bequeathed to him Sítio Senhor Niquinho where Luiz Paulo grows Yellow and Red Bourbon as well as Geisha and Catuaí. Luiz Paulo has been running some innovative experiments on his farm with some very interesting results. He has looked to the wine industry for guidance and started using anaerobic fermentation as a means of removing the fruit and pulp from the parchment-covered beans. Our shipment is processed using the more established pulped natural method, but we look forward to learning more about Luiz Paulo’s experiments and seeing what impact this might have on the other processing methods. Process Pulped Natural Process Varietal Yellow Bourbon Region Carmo de Minas Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
