Unavailable About Profile Luiz Paulo Dias Pereira Filho took over the management of Sítio Boa Vista in 2014 when his mother, Maria Rogeria (Fazenda Irmãs Pereira – The Pereira Sisters) retired. The farm was originally bought by Luiz Paulo’s grandfather Antonio Andrade Pereira. Antonio coveted the land for a long time. It neighboured his original farm, Fazenda Serrado (which became Fazenda Irmãs Pereira) and encompasses the highest point so offers a beautiful view (Boa Vista) of the surrounding area and hills. When Antonio bought the farm, it was in dairy production. There is a long tradition of dairy farming in this area of Brazil, and many of the extended family’s farms had dairy production using Girolando stock. The farm is now planted with Yellow and Red Bourbon coffee which is processed using the Pulped Natural method at the Irmãs Pereira mill. Process Pulped Natural Process Varietal Yellow Catuaí Region Carmo de Minas, Minas Gerais Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
