Unavailable About Profile Carmo de Minas is home to some of the most beautiful coffee farms in Brazil and is now famous for the refined flavours of its Yellow Bourbon stock. We’ve been buying from this area of Brazil for over fifteen years now and are always pleased to visit each year to taste through the new crop coffees and make our selection for the year. Fazenda do Sertão is always on the tasting table, and we are really pleased with its rich cocoa notes and full body. This is a family run business, which has been going since the farm was established in 1891. We’re looking forward to an extended visit to Brazil this year and we’ll be catching up with Chico and the team at Carmo Coffees to learn more about the work they have recently completed at Sertão and their upcoming projects. Process Pulped Natural Process Varietal Yellow Bourbon Region Carmo de Minas, Minas Gerais Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
