Unavailable About Profile This is the fifth time we have had coffee from Cuchi Gonzales’ farm on our counter and we are delighted to have it back for this crop. Cuchi Gonzales has been a member of Agricafe’s Sol de la Mañana program since 2014. The program provides agricultural and market assistance to farmers in the Caranavi region, providing agronomy training to help increase the quantity and quality of coffee from the area. Since accessing the program, Cuchi has made significant improvements to his farm and picking processes. On the farm, Cuchi has pruned and, where necessary, replanted to maintain a distance of at least half a meter between trees, and three meters between rows. This helps increase the sunlight the plants’ leaves receive, which in turn helps with photosynthesis and the trees’ health. Process Traditional Washed Process Varietal Caturra & Catuai Region Copacabana, Caranavi Grind Guide Cafetière A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot. Aeropress slow Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting. Filter This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta. Stovetop This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot. Aeropress fast This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress. Domestic espresso A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
