Las Lajas is a family-owned farm and ecological coffee mill in Sabanilla de Alajuela, Costa Rica, run by third-generation producers Oscar Chacón Solano and Francisca Cubillo. Founded in the early 2000s, the family focuses on quality, environmental conservation and preserving coffee culture for future generations. Grown at 1,500–1,700 masl, the farm is predominantly planted with Caturra and Catuai, with harvest running from December to February. For the Black Diamond process, coffee is pulped with 100% of its mucilage intact before undergoing 100 hours of anaerobic fermentation. It is then dried on raised beds for 15–20 days, creating a distinctive and expressive natural process coffee.
