Guatemala Blue Ayarza is a stunning single-origin specialty coffee from the volcanic slopes surrounding Santa Rosa’s legendary crater lake. Grown at exceptionally high altitudes ranging from 1,400 to 2,000 metres above sea level, this lot blends traditional varietals including Anacafe 14, Bourbon, Catuai, and Pache. Processed using the washed method, it delivers an incredibly clean, balanced, and expressive cup that showcases the region’s true specialty potential. Coffee lovers will delight in a rich and comforting flavour profile bursting with sweet berries, deep prunes, and a smooth, velvety milk chocolate finish. This lot is sourced from regional smallholder farmers and processed centrally at Covoya’s dedicated cherry mill located at 1,500 metres. While Guatemalan coffee is traditionally processed individually by smallholders—making quality control difficult to guarantee—this project pays farmers a premium for perfectly ripe cherries to be processed under strict, uniform standards. This innovative centralized approach unlocks the true specialty character of the region while directly supporting the financial sustainability of the local farming community.
