El Matazano

Honduras El Matazano is a beautifully layered coffee from Elvin Castillo’s family farm in the Sierra de Montecillos. Grown at 1,450 metres above sea level, Finca El Matazano is a small five-hectare farm cared for with real precision, surrounded by fruit trees, timber trees and natural water sources that help create a healthy, shaded environment for the coffee. In the cup, it opens with a sweet pear drop character, before moving into a clean citrus acidity that reminds us of dry white wine. The finish is smooth and mellow, with soft chocolate notes bringing everything back into balance. Elvin’s connection to specialty coffee runs deep. His father, Francisco Antonio Castillo, was a pioneer in the region, and Elvin now leads the cupping laboratory at CONEXH. This is a coffee shaped by family, place and careful attention at every stage.
