Colombia Guillermo Muñoz Washed

A fully washed lot from the El Bolsillo farm in Ortega, Tolima, grown by Guillermo Muñoz at 1,860 metres. Guillermo arrived in Tolima at 22 to work as a picker, eventually saving enough to buy his own 1ha farm. He cultivates around 5,000 Castillo trees, picking only fully ripe cherries every 20 days, fermenting overnight in bags then dry fermenting in a tank for 36 hours, and drying in a parabolic solar dryer for around 12 days. Guillermo is part of Cafe Agrario, an association of 35 producers from Ortega supported by export partner Siruma.
