Brazil Valter Dias – Sitio Cafundo Natural Raisin, spiced pear, brazil nut, chocolate Grown in the hills of Minas Gerais, this naturally processed Brazilian coffee comes from Valter Dias and his farm, Sitio Cafundo, near the small community of Barra Grande. Valter has spent over 15 years producing coffee here alongside his brother Wagner, focusing on careful lot separation, organised harvesting, and slow drying in small batches to bring out the best in every crop. Alongside traditional patio drying, the brothers use a ventilated static box system which allows warm air to circulate evenly through the cherries. This controlled drying process enhances natural fermentation and helps create a sweeter, more layered cup profile. The result is a rich, comforting coffee with notes of raisin, spiced pear, brazil nut and smooth chocolate. A brilliant everyday natural for espresso, filter, or milk-based coffees.
