Jose Jijon
Lot data: Typica Mejorado • 2,222 m.a.s.l. • Washed • Spring-water fermentation • Raised-bed dried • Grade: 88.5 This Typica Mejorado from Finca San Pedro in Putushio, Loja is a rare late-harvest lot from Jose and Pepe Jijon, grown at 2,222 metres. We chose it for its honeyed sweetness, floral lift, and remarkable clarity. Picked at peak ripeness, gently depulped, fermented in spring water, and dried slowly on raised beds, it keeps the profile clean and finely structured. The high elevation gives the cup extra precision without sacrificing sweetness. Expect honey, blueberry, peach, and white flowers, with a silky texture and an elegant, tea-like finish. The profile stays bright, delicate, and well defined throughout. Yet beyond the cup, this is a story of family unity and profound respect for the land. By safeguarding biodiversity, nurturing stable microclimates, and valuing their dedicated team’s well-being, Jose and Pepe ensure every bean reflects the heart and soul of Finca San Pedro. This is our first-ever purchase from Finca San Pedro, and it holds a special place in our journey. We hope it finds one in yours too.
