Maranhao is an extended fermentation process, meaning cherries sit in the fermentation tanks for slightly longer, 72 hours in this case, leading to deeper and more complex flavours. There is a high risk to this method, and entire crops can be lost if mismanaged, which is a credit to the highly skilled work the Betti Family do at Sitio Maranhao. The reward is worth the risk in this case, resulting in a super unique, fruity and juicy flavour profile.
