The cup stays clean and expressive, with fruit at the front and cocoa adding depth as it cools. THE STORY Ituze means calmness in Kinyarwanda. The cooperative began in 2008 when 18 women came together to create support, friendship and a more secure source of income for themselves and their families. Coffee became part of a wider community built around shared knowledge, practical help and collective progress. Today, the cooperative is owned by 20 women who continue to grow coffee alongside other activities that strengthen household income and local opportunity. Built through community. Grown with purpose. BEHIND THE BEANS This coffee comes from Ngamba in Rwanda's Kamonyi district and is produced by the Ituze Women's Cooperative. Red Bourbon cherries are grown at approximately 1,600 masl and fully washed to create a clean, structured cup. The process supports clear citrus and stone-fruit flavours while allowing the coffee's cocoa depth to remain present. We roast it medium-light in Whitminster to keep the fruit expressive while building enough sweetness and body for both filter and a longer-ratio espresso. HOW TO BREW IT RWANDA is particularly expressive as filter but also makes a distinctive guest espresso. For V60, start with 15 g of coffee to 250 g of water at approximately 93–94°C. Use a medium-fine grind and allow the coffee to cool slightly to reveal more stone fruit and cocoa. For espresso, begin with a longer ratio around 1:2.5. The extra yield helps soften the citrus, open the sweetness and keep the finish clean. It also works well as AeroPress or batch brew. DETAILS
