Cajamarca, Peru This Catuai lot comes from Fredis Rodríguez Sosa, a smallholder farmer in the village of Ayacape, Jaén, Peru. After years growing potatoes and maize, Fredis began cultivating coffee to increase his income and provide a more sustainable future for his family. The Typica variety has flourished in the region’s favourable climate, and coffee has since become his main source of livelihood, transforming both his farm and the opportunities available to his family. Only the ripest cherries are carefully harvested before being floated to remove defects, pulped and fermented anaerobically for 72 hours. The coffee is then washed and slowly dried under the Peruvian sun, with regular turning to ensure even drying and preserve its quality before storage. The result is an expressive coffee, reflecting the care and dedication behind every harvest.
