VARIETALS ARABICA FLAVOUR CHOCOLATE VANILLA RED FRUITS This coffee originates from the highlands of Chiapas, grown at high altitude above sea level on rich volcanic soil and shaped by a cold, rainy microclimate. These conditions naturally slow the maturation of the coffee cherries, concentrating sugars and developing a much more complex cup. The coffee is cultivated by indigenous farming communities organised into cooperatives, where ancestral knowledge and a deep connection to the land are passed down through generations. Every cherry is picked by hand and processed using traditional methods, that further define the coffee character.
