Limited to just 100 boxed 250g bags, Limited Release #02 is a special carbonic maceration lot from Finca El Embrujo in Anserma Caldas, Colombia. Sealed in tanks, ripe cherries ferment in a carbon dioxide-rich environment for 180 hours, drawing on a process more often associated with fine wine to develop sweetness, complexity and texture. In the cup, expect sweet spice, sparkling acidity and silky mouthfeel, with a subtle boozy finish - layered, elegant and unmistakably distinctive.
