Grown at around 1,100 metres above sea level, the farm benefits from warm days, cool nights and clearly defined seasons — ideal conditions for slow cherry development and even ripening. This lot is 100% Red Catuai, a Brazilian mainstay variety prized for its reliability, sweetness and structured cup profile. It performs particularly well at this altitude, producing dense cherries that translate into body and depth in the cup. Processed using the Natural method, the coffee is dried inside the fruit, allowing sugars from the cherry to influence the bean. The result is a fuller body, richer sweetness and classic Brazilian comfort notes — chocolate, nuts and caramel — with a gentle fruit undertone rather than bright acidity.
